Garlic Ginger Chicken with Spinach and Bell Peppers

Garlic Ginger Chicken

Ingredients

  • 12 oz ground chicken breast
  • 1 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 1 cup of spinach
  • 1 bell pepper, diced
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp of mirin (Japanese sake) OR substitute 1 tbsp of white wine with 1 tsp brown sugar

Directions

Add olive oil to sauce pan and bring to medium heat. Add garlic and ginger, cook until you smell aroma. Turn to medium-high heat, add chicken with salt and pepper and cook to golden brown. Add spinach and bell pepper, then add soy sauce and mirin. You may pair this dish with some lightly boiled broccoli or green beans on the side.
