Beef Stroganoff Soup

Ingredients

  • 1 pound extra lean ground beef (2 lean)
  • ½ cup chopped scallions (1 green)
  • 1 cup chopped mushrooms, white or portabella (2 greens)
  • 2 cups low sodium beef broth (2 condiments)
  • 4 tablespoons reduced fat cream cheese (4 condiments)
  • ½ teaspoon dill weed (1/2 condiment)
  • 2 cups cooked spaghetti squash (4 greens)

Directions

Brown beef in pan, measure out 10 ounces, returning that to the pan, reserve any leftovers for another use. Add to the browned beef the scallions, mushrooms, and beef broth.  Bring to a simmer and simmer for 5 minutes, then add the reduced fat cream cheese.  Stir until cheese dissolves and add the dill weed and cooked spaghetti squash.  Heat through and enjoy! This is really yummy! Serves 4 ( each serving is: ½ lean, 1 ¾ green, 1 5/8 condiment) You can serve this with a nice salad with some cheese to make up the other ½ lean.

  1. Hey is anyone there that can answer a question about this recipe??
    I made it last night for my Lean and Green meal … but wondering maybe if it’s NOT an approved recipe for MF?? Seems to have too many calories, etc … it was yummy – however today I have a INDIGESTION type of feeling in my gut…?? I’ve been on MF for 7 days now and was happy with my weight loss so far – could this have messed up my ketosis stage?? 😐

    1. Carol – I hope you are feeling better by now. I don’t think that there is anything too out of whack in this recipe that could affect your ketosis. I find that I do have more intestinal issues with MF – I attribute it to the artificial sweeteners and the lack of fiber. Perhaps it was just a blip and you are back to feeling good? Tomorrow is my 4 weeks on MF. (Lost 15 lbs so far.) Good luck to you!

  2. My beautiful GF is doing the Medifast diet and having wonderful results.
    I support her by preparing and eating the same Lean and Green meals for dinner. We have he Stroganoff Soup and it was just a little bland for my taste bu neither of use experienced and indigestion from it or from any other meals yet.
    I look at the portions sugar fat and calorie content quite close and I feel hat the recipe falls well within the limits. We recommend tring the Tuna Casserole it was fabulous and so far our favorite as of now. Good luck to all.
