Muffins

  • One packet Dutch Chocolate shake
  • 1/4 – 1/3 water (Packets do not always have the same amount of powder, so the water can vary. Start with 1/4 cup, add more as needed)
  • 1/2 tsp cinamon
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla extract
  • 1/2 tsp walnut extract

Mix together thoroughly. Spray a mini muffin pan with non stick cooking spray. Bake at 375 for 20-25 minutes. Ovens vary, so cooking times will as well. This made 6 mini muffins.

    I was so excited to find all of these amazing recipes. I’m on day 4 and when I weighed myself this morning I had already lost 5.2lbs! Anyway, This may be a no brainer, but because the recipe only calls for one packet, does this mean you need to eat all 6 mini muffins? My stomache shrank pretty quickly as portion control was/is my problem… Please advise

  2. Some of the Medifast products have whey protein instead of soy and I read that whey protein powder can be compromised or rendered ineffective (denatured) when heated to this degree, but soy remains stable, so one must take care not to “bake” with whey protein.

    1. Kate, this is a common misconception regarding protein. Proteins are made of amino acids… denaturing simply means to break the protein strand down into its amino acids. This is EXACTLY what happens in our stomach anyway, so it’s irrelevant whether you eat the protein as a whole strand or “pre-digested”.

  3. I changed this up a bit and used a banana shake and instead of walnut extract I used coconut. Wonderful! Im down 15 lbs in 3 weeks and have been loving the foods. Thanks for sharing.

    1. I am SO thankful to have found this site! I have been on the program for 12 days and am already down by 13lbs! I was at the point where I would dog food if it helped me lose weight! So tje first days soldiard through every meal, as is, just add water. Um, yeah. Super glad I have stick it out and have learned ways to make the food tastier! These wede delicious!

    1. Baking powder may be old or need to activate with 1/2 teaspoon of baking soda to help the “rise”…

  4. I tried making this. I followed the instructions/ingredients, however, my muffins were sunken in. There was like nothing there. They totally sunk it. I don’t understand it?

  5. I am addicted to these! I use a snowflake cookie sheet mold and needed to reduce the heat and cooking time. I also didn’t have any walnut extract, so used almond extract (though slightly less). They have a texture similar to whoppie pies and I love that I don’t have to add artificial sweetener to it. Trying it with vanilla shake mix tonight (already tried it with dark chocolate and it was great!). Thank you so much for sharing this!

  6. Hi I want to bake these for my mom and sister. 🙂 give them a little surprise to help them through. Is it possible to omit the walnut extract or is it a necessity? (sorry for my spelling X_x) Thank You! 😀

  7. Do you need to count the baking powder and extracts as condiments here? These sound delicious, but I am concerned I’d be far exceeding the 3 condiments per day. Has anyone had problems with this? Thanks!

    1. Yes Corey, as written the recipe would equal 4.5 condiments which doesn’t fit the parameters for the 5&1 program.
