Medifast Granola – Step by Step

Now that I am restocked with the Medifast basics, I’m going to try some of the recipes for the pre-packaged foods. I’ve been dying to try these out, but haven’t had anything to work with. One of the things I’ve been hearing a lot about is “Granola” made from Medifast Oatmeal. I’m not as much of an oatmeal hater as a lot of people I talk to, but I’m always interested in trying new things. So, here we go… Medifast Granola!

The ingredients are simple enough and can be customized according to your taste. Here’s what I used:

  • 1 packet of Medifast Oatmeal (apple cinnamon)
  • 1 Splenda packet
  • 1 tsp. Cinnamon
  • 1 tsp. Vanilla
  • 1/3 cup or less of water

For this experiment, I mixed the cinnamon and Splenda right into the mix. But I know some people prefer to sprinkle it on after the granola is cooked. Also, if you prefer a different spice, try Apple Spice or Pumpkin spice instead of Cinnamon. Just pick something that complements the flavor of the oatmeal you’ve chosen.

Put all your ingredients into a mixing bowl. Slowly add the water

You want the mixture to be thoroughly mixed and moist, but it needs to be thick.

Coat a cookie sheet with Pam or the non-stick cooking spray of your choice.

Now it’s time for the messy part… pinch off tiny pieces of the mixture and put them on the cookie sheet in small globs. The smaller you can get these, the better your granola will turn out.

Pre-heat your oven to 350 degrees and cook your granola for 8 minutes. Then, turn your granola pieces over and cook for another 5-8 minutes. Cooking time will be determined by the size and thickness of your granola, so keep an eye on it. Your granola pieces should be nice and crispy, but not burned.

Now you’re ready to dig in. Medifast granola is best fairly fresh out of the oven. If you save these for later eating, you may find that they have reverted to an oatmeal-y goop. It’s best to eat them when they are hot, crunchy and right out of the oven.

These photos are from the first time I attempted Medifast Granola. In this first attempt, I inadvertently made the granola pieces a little too big. The larger pieces were a little “doughy” in the center, but the small pieces were delicious. I’ve since refined my process and use a little less water and I concentrate on making the smallest pieces possible.

Overall, this is a pretty tasty recipe. If you can’t stand the oatmeal prepared normally, I would definitely recommend it. I’m not sure, however, that I would go so far as to actually call this granola. It doesn’t really taste or feel like granola, but it does taste good.

    1. I’ll have to try this granola recipe. I am a “newbie” with Medifast (on my 3rd day). I had the apple cinnamon oatmeal for the first tme today. OMG…I could NOT eat it. I had two tsps and threw it out. Does anyone have any tips on getting it to taste better?

  1. I found a way to improve the shakes somewhat. I use a good part of a can of diet rite zero black cherry soda, ice, and orange creme shake powder. I mix it up in my magic bullet and you have a half way decent smoothee. It also works well with Red-Raspberry favor also. I plan on trying your receipe after I get back from travelling.

  2. I want you to know, this is the BEST medifast oatmeal recipe I’ve ever tried. I was very happy with it, and it’s the only way I plan to prepare the oatmeal from now on.

  3. Try adding a full cup of water, microwave for 1:45, stir then let sit for a moment. It will be much better and less pasty.
