Mock Pasta Salad

Ingredients

  • ¼ cup chopped cold asparagus (I used frozen) (1/2 green)
  • ¼ cup chopped scallions (1/2 green)
  • ¼ cup chopped cucumber (1/2 green)
  • ¼ cup chopped red peppers (1/2 green)
  • ½ cup cooked and chilled spaghetti squash (your mock pasta) (1 green)

Directions

Toss all together with 2 tablespoons of Newman’s Lighten Up Red Wine and Olive Salad dressing (or any kind you like, Italian is good too) (1 healthy fat) **You need 1 cup of chopped veggies, any kind you like, tomatoes, celery, whatever you have on hand **If you want to make this a complete meal, just add cooked shrimp or flaked tuna.
