Garlic Broccoli

Ingredients

  • 3 cups broccoli, chopped
  • 1 clove garlic, chopped
  • 2 cups vegetables stock
  • salt and pepper to taste

Directions

Saute garlic in pan sprayed with non-stick cooking spray. Put broccoli and roasted garlic in the pan, add stock, salt and pepper. Bring to a boil then simmer 30 minutes or until broccoli is completely cooked.

Servings: 2

Note: You will need to pair this with meat or another source of protein to make it a complete Lean and Green meal.

There must be some mistake with the garlic broccoli recipe. It says bring to a boil and simmer broccoli for 30 minutes…no way. It would just be mush. They must mean to roast broccoli in oven for 25 minutes OR to steam/simmer for 6-7 minutes on the stove.

Perhaps it’s meant to be more like soup?
