Blueberry Pancakes

Ingredients

  • 1 pkg. Medifast Eggs
  • 8 oz water
  • 2 pkg. Blueberry Medifast Oatmeal
  • 1/4 tsp Baking Powder
  • 1/8 tsp Vanilla

Directions

Thoroughly, mix eggs and water using a whisk or blender. Then, add the vanilla and baking powder. Gradually, stir in Medifast oatmeal, one packet at a time. Make sure the oatmeal is evenly dispersed and mixed very well. You don’t want flat pancakes!

Spray a skillet with Pam. Pour the mixture onto the skillet and cook them just like normal pancakes. You’ll know when they’re done.

This will make 6 pancakes which equals 3 servings.

Keep the extras as leftovers and reheat them in the microwave for 15-20 seconds.

  1. The pancakes are the best! Make them with the maple/brown sugar oatmeal and it takes like you have the syrup already on them. I would also adjust the water to 6 oz. This recipe just adds to the breakfast choices and gives you a break. I reply to Kat…you can make them with any of the oatmeal choices. They are all good….try a little nutmeg spice too! MMMmmmm.

I used to love apple cinnamon pancakes, so I used the MF apple cinnamon oatmeal instead of blueberry, added a packet of splenda for sweetness, and a little cinnamon on the pancakes before I flipped them. Ended up making 9 3×3 pancakes (3 pancakes = 1 MF meal)…delicious! (I never really liked syrup, so I just ate them plain. They were still moist and very yummy!)

  4. I mix the pancake packet (any flavor) with a little cinnamon, 1 packet of Splenda, and the water. Instead of making it in a skillet, I spray a small baking dish with Pam or other cooking spray, and put the mix in that. Microwave on high 1-2 minutes for a cake-like texture. You can put syrup on top but I don’t think it’s needed!
